Resume the Affare,

I know...I haven't called, text, facebook chat, bbm....but distance makes the heart grow fonder, right?  I hope so because I have missed the world of blogging!  Since I have been gone...
1.  Completed my first half marathon - 2 hours and 13 minutes!
2.  Finished v1 of Perfect Affare:  A Guidebok for the Passionate (FIRST COOKBOOK!)
3.  Successfully eaten 3 Thanksgiving Dinners and 2Christmas Feasts plus many hearty leftover meals
4.  Taken a romantic getaway to Asheville, NC (don't worry, a detailed recap of the vaca coming soon)

5.  Completed over 20 hot yoga classes

Now that I am back, re-energized and a few pounds heavier, I am glad you will continue to follow me on my journey.  2012 will bring new and exciting stories (I can feel it), new recipes and challenges that I am thrilled to share. 

Since football bowl season is in high gear and NYE party planning continues I am going to do a 7 Day Dip Tribute.  Nothing is better for a party app than a dip. 

Dip Tribute #1 - Susie's Spinach Dip
1 package frozen, chopped spinach
1 can artichoke hearts (plain, not marinated)
Light Sour Cream
Low Fat Mayo
1 cup Italian Blend Shredded Cheese
Garlic Powder
Italian Seasoning
Dried Oregano
S&P
Defrost spinach in microwave about 3 minutes, let cool and drain off as much of the liquid as possible.  The liquid can cause your dip to become soggy, ick.
In a bowl mix 1/2 cup sour cream, 1/2 cup mayo about 3/4 cup of cheese and spices.  You can add more or less mayo/sour cream to reach your desired consistency.  Once spinach is water-free, spearate with yuor fingers and gently blending into cream mixture.  Place in baking dish (lightly greased) and sprinkle with remaining cheese.  Bake 350 degrees for 25 minutes or until cheese is golden and bubbly!
